Meals With Leftover Rice

Let’s accept it: all of us struggle to figure out what to do with our leftover meals. Want to know the best part? I will be helping you with this challenge if you have leftover rice at home. One of my most effortless way to use leftover rice is to prepare a leftover rice burrito that is amazing and delicious. 

Burrito is a Mexican dish, fit for a perfect vegetarian dinner and a completely balanced diet. You can prepare this for your regular dinner or evenformal dinners. Furthermore, you can customize it according to your family’s choice by adding avocados, corns, and other ingredients to make it a perfect part of dinner.So, whatever the event is, you can try my recipe and never be disappointed with the amazing flavors that come out.

 

  1. Get all the required ingredients, including large tortillas, cooked rice, lime juice, fresh chopped cilantro, minced garlic cloves, diced onion, oil (preferably) olive oil, beans, cumin powder, chili powder, Hot & Spicy Sauce, and salt, to taste.
  2. Take a large bowl and add cooked leftover rice. Next, add fresh chopped cilantro and lime juice to the bowl. Now heat the oven and place this microwave-safe bowl in it. Besides this, you can also cook it using the stove. In both cases, cook the mixture until hot.
  3. Next, take a large pan. Add olive or vegetable oil to it, and add diced onion. Sauté it for at least five minutes until it softens. Now add the minced garlic, or you can use garlic paste—Cook for a minute.
  4. Reduce the flame and add beans. I personally like usingred kidney beans;however, you can also add pinto beans or any beans of your choice. Now add chili powder and Hot & Spicy Sauce. Mix well.
  5. Also, add salt to taste. However, avoid using too much salt as other leftover ingredients might have the required salt too. Now allow the beans to cook for 5 minutes.
  6. Prepare flour tortillas and add a spoon of rice and beans mixture to them. You can also add other toppings you love the most. For example, my family loves adding cheese and white sauce.
  7. Now wrap the burrito. First, roll the short ends in and then gently wrap the longer side over the filling and wrap gently. 
  8. Cut the roll from the center and serve. It should not be stored for a long time. Serve hot. Don’t forget to put in Hot & Spicy Sauce by the side to be added separately if required.

 

Pro Tip:

If you are preparing this as an additional item for dinner, then add corns, avocadoes, tomatoes, cheese, or chopped bell pepper. All these ingredients will add a fabulous taste to the dish. It will be something more than just leftover meals. Try this recipe at home and share your views with us.
