4 Easy Plant-Based Soups Recipes

Why buy food from a vegan and vegetarian restaurant when you can make your own? Here are some delicious soup recipes that you can try. What’s more, is that most of them don’t require that many ingredients!

  1. Black Bean Soup

Heat 2 tablespoons of olive oil in a pot over medium-high heat. Saute one onion (diced), one green bell pepper (diced), and 2 minced cloves of garlic. Cook until the onion becomes translucent.

Add 2 cans of black beans, one can of diced tomatoes, and one cup of water to the onion mixture. Bring to a boil.

Reduce heat to medium-low and simmer for 20 minutes.

  1. Broccoli Soup

Bring one large pot of water to boil. Add a generous pinch of sea salt to the water.

Add 2-3 large heads of broccoli (cut into chunks) and cook for about 3 minutes. Remove the broccoli from the pot and place it in a bender.

Add the broccoli water to the blender until it’s half-full. Blend on high speed until smooth. Serve with chopped walnuts, cheddar cheese, or a drizzle of olive oil.

  1. Zucchini Soup

Add one cup of raw cashews, 3 1/2 cups of vegetable stock, and 1 kilogram of peeled zucchini (chopped) to a saucepan. Cook over medium heat and bring up to a simmer.

Continue cooking until the zucchini and cashews become soft. Remove from heat and transfer the mixture to a blender. Blend until smooth and serve with vegan butter.

  1. Pumpkin Soup

Heat one tablespoon of olive oil over medium heat in a large pot. Add one onion (chopped) and 3 cloves of garlic (pinched) and cook for 3-5 minutes.

Carefully stir in 2 cups of pumpkin puree, 2 cups of vegetable stock, 1 can of coconut milk, 1 tablespoon of maple syrup, 2 teaspoons of ground ginger, and 1/2 teaspoon of ground ginger.

Bring to a boil before returning to low-heat. Simmer for 20 minutes until the soup is thick.

Puree with a blender until smooth and garnish with cashew cream and pipits.
